Grimlock Isotope is a plugin we made to dynamically show all the categories of your WordPress website. However, it’s important to understand it didn’t catch the categories one by one. It use a default WordPress behaviour to make all the categories visible and use them to dynamically show the related posts.

Unfortunately, to get the feature you’re trying to achieve, you need to change this default WordPress behaviour. To our knowledge, there is no plugin that you could install to add this feature to your website. We think that this feature requires custom development work.

As alternative, I can recommend you to use Grimlock Term Query block and pick the specifics categories you want to show. Then, when your visitors will click on the selected category, they will be redirected to the archive of this category. However, note that Grimlock Isotope will not be used as it only works on the blog page with all the categories.
