Hi Caroline,
I just found this topic in BuddyPress support. I think it might help you solve this: REMOVE EDIT OPTION FROM PROFILE.
However, I’m not sure that removing this action is without consequences. To comply with the GDPR, you must allow your users to access their information. To make sure of that, I suggest you to read this article from our documentation:

Hello,
Thank you for your answer.
I don’t want to prevent the user to modify his profile. He will be able to do it from the menu under his picture (see scren). I just want to remove the icon in the sub menu like the messages and notifications that I could remove thanks to your code.

Hi Caroline,
Thank you, I understand now. Please be aware that this is standard design with our theme and BuddyPress.
As this is not breaking the page, changing this is considered customization work. To change this, simply add the following code snippet to your website:
/** * Hide settings icon in profile */ #buddypress:not(.youzer) #profile-content__nav ul.settings-nav li a#user-settings{ display:none; }
To add this code snippet to your site, we recommend that you paste it to the Custom CSS panel of your WordPress Customizer. Just go to your dashboard and navigate to “Appearance > Customize > Additional CSS”.
Pasting your code snippet there should do the trick for you.Also, it’s important to remember that we share snippet only to solve issues with our theme. Any further request for CSS snippets will have to be part of a defect that needs to be fixed urgently. No snippets will be shared otherwise.
If you want to go further with the customization of your website, we advise that you require customization work.
Regards,
