Be aware that only the courses you started will be visible on the user profile, not the courses you made. This is how LearnDash works by default. You can manually add the user in case you want them to see your courses in their profile immediately.
In case you need more help with LearnDash, it’s best if you try to reach the plugin authors. They will be more informed and better suited to help you: LearnDash support

Can you confirm me you created a group in Dashboard > LearnDash > Groups with your users and assigned this group to the course? I just tested with a local demo and the courses I created are well displaying in the profile.
Please also make sure that you have the latest theme version and that all recommended plugins are up-to-date. Finally, you could also consider clearing all activated caching system as well as your browser cache before investigating any further.
