Hello,
I have installed learndash and the addon grimlock for learndash but unfortenately, on the my courses page in the user profile page, there are no courses shown at the moment.

Hi Rene,
On the profile page, in the Courses tab, only the courses the user has enrolled in are displayed.
Note that this issue is related with LearnDash (sfwd-lms). If you need more help with that, it might be best if you try to reach the plugin authors. They will be more informed and better suited to help you. To go further, we invite you to post your request on their support forums:

Thank you. Can you give me more information on how the theme is using learndash in this specific section, so that I know what issue I should report on their end?
You can close the topic. I thought, as an admin I would be enrolled in the course by default. I now enrolled myself and the page works as it should Thank you again!
